Shrimp and veggie fried rice…
Sauté broccoli, zucchini, carrots, onion, bell peppers, and minced garlic in 2 tbs of olive oil. Add 3 eggs and cook thoroughly. Add 2 cups of cooked white rice, 2 tbs of sesame oil, and soy sauce to taste. Mix and cook about 5 mins. Remove from heat, cover set aside.
Season 8-10 Argentina red jumbo shrimp with 1/4 tsp salt and pepper, 1/8 tsp garlic powder, onion powder, smoked paprika, cayenne, and chili powder, 1/2 tsp brown sugar, and a few shakes of celery seed.
Over med-high heat, melt 1/4 stick of unsalted butter with 2 tbs of olive oil. Once skillet is hot, add all shrimp. Cook 2-3 mins or until a nice reddish golden crust is formed, then individually flip and cook other side for the same time. Add 1/2 tsp minced garlic and stir. Remove from heat. Plate rice, add shrimp to top of rice, top with all pan drippings and parsley.
