Honey Chipotle Shrimp

Shrimp marinated in honey chipotle sauce served with a side of roasted garlic broccolini. This honey chipotle shrimp with roasted garlic broccolini is simple to make and tastes amazing.

Ingredients:

Honey Chipotle Shrimp
2 tablespoons olive oil
3 dozen jumbo shrimp, deshelled and deveined
2-3 chipotle peppers in adobo sauce, chopped
2 tablespoons adobo sauce
1 tablespoon honey
¼ teaspoon chili powder
½ teaspoon salt
Roasted Garlic Broccolini
¼ pound broccolini, sliced
4-5 garlic cloves, minced
1 ½ tablespoons olive oil
Salt to taste

Directions:

First, preheat the oven to 400F. Line a baking sheet with aluminum foil and lightly grease the surface with olive oil. Set the baking sheet aside for now.
While the oven is preheating, add diced chipotle peppers, adobo sauce, honey, chili powder, and salt in a large bowl. Mix until the ingredients are well combined. Now, add shrimp in the bowl and mix until all surfaces of the shrimp are covered in the sauce. Let the shrimp marinade for a few minutes.
Place the broccolini onto the baking sheet and evenly distribute minced garlic over the broccolini. Drizzle olive oil over the broccolini until they are coated in the oil and then sprinkle a little bit of salt. Place the baking sheet in the oven and roast the broccolini for about 5-6 minutes until the side down is slightly charred. Turn the broccolini to the other side and roast for an additional 5 minutes before removing them from the oven.
In a medium sized skillet, add olive oil over medium heat. Once the olive oil has heated for about a minute, add the honey chipotle shrimp and cook them for a few minutes until all the shrimp have turned from a grey color to an orange color.
Place the shrimp with the broccolini onto two plates.
Serve the honey chipotle shrimp with roasted garlic broccolini warm.
