Citrus Marinated Shrimp Skettes

Ingredients
Marinada citrus:
2 tablespoons freshly squeezed orange juice
4 tablespoons pineapple juice
1 tablespoon honey bee
1 spoon orange zest
1 spoon lemon zest
1 teaspoon finely chopped garlic
Salt and pepper to taste

Shrimp skeepers:
16 medium shrimp peeled and withdrawn vein
16 medium pineapple paintings
Mushrooms
Brown red pepper
Purple Onion

Preparation:

Marinada citrus:

Mix in a deep dish all ingredients, orange juice, pineapple juice, honey bee, orange and lemon zest, finely chopped garlic and seasoning to taste with salt and pepper.
Place the shrimp clean and peeled and mix very well.
Cover the plate with paper film or transparent and refrigerate for 30 minutes.
Shrimp skeepers:
If the skeeta sticks are wooden soak for 30 minutes (let the water cover them all), so they won’t burn when you place them in the grill.
Place 2 shrimp in each skeer
Light coal on medium fire or gas grill at medium temperature. The ideal heat is when you can place your hand over the heat of the grill and leave it without burning about 3-4 seconds.
Clean and grease the grill.
Cover again the skeaters with the most marinated and place on the grill.
Let cook 1 to 2 minutes per side or until shrimp have changed from color to pink. During cooking add more marinated than left on the plate with the help of a kitchen brush for vegetables and shrimp to take more flavor.
Serve hot with rice, salads, grilled potato or roast or more grilled vegetables.

Notes
– If you can’t find a good ripe pineapple you can replace it with canned pineapple.
– You can change the vegetables to your liking or whatever you have in the house. If you don’t like mushrooms or are allergic to some ingredient just replace it with another.
