Smothered Chicken And Gravy


Ingredients :

4 Chicken leg quarters
1 cup yellow onion diced
1/2 Tsp Ground black pepper
3 Cups chicken stock + Extra If Sauce Is Too Thick
1/2 Tbsp Kosher salt
1/2 Tbsp Paprika
1/2 Tbsp Butter
1/2 Tbsp Dried Oregano
1 Tbsp Minced Garlic
1/2 Tbsp Fresh Or Dried Rosemary
2 Tbsp All Purpose Flour
3 Tbsp Tomato sauce
1/4 Tbsp Thyme
3 Cups low sodium chicken bouillon powder

Preparation :

Taking Chicken Season With Salt, Ground Black Pepper, And Paprika.
Adding Olive Oil To Pot, When Oil Is Heated Add Chicken Skin Side Down.
Allowing Chicken To Sear On Both Sides And Lightly Turning Brown.
Removing From Pot And Setting Aside.
Using The Same Pot With Rendered Chicken Fat Add Butter, Onions And Pinch Of Salt To Taste And Stir Until Onions Become Transluscent.
Adding Flour And Continuously Stirring Creating A Roux. (If Browning Or Clumping Occurs It’s OK)
Adding Tomato Sauce, Oregano, Rosemary, Thyme, And Low Sodium Chicken Bullion Powder, Chicken Stock And Continuously Stirring Until Sauce Becomes Smooth.
Returning Chicken To Pot Skin Side Up Cook For 30 Minutes Coat With Gravy.
After About 30 Minutes Turning Chicken Skin Side Down And Cook For An Additional 30 Mins. Or Until Chicken Is Tender And Falling Off Bone.
If At Anytime If Gravy Is Too Thick Add More Chicken Stock To Loosen Up.
