6 Thin cut chicken breast cutlets
1 Container green onion cream cheese
¼ C. Olive oil
½ C. Chicken broth
1 Large container sliced mushrooms
1 Bag fresh baby spinach leaves
Garlic herb seasoning
Black pepper to taste
8 oz. Shredded mozzarella cheese
Preheat the oven to 375 degrees.
Place the chicken into the bottom of a 9×13 baking dish and season with the pepper and garlic herb seasoning.
Spread the mushrooms and spinach on top of the chicken.
Warm up the cream cheese, and whisk together the cream cheese, olive oil and chicken broth in a mixing bowl.
Pour the cream cheese mixture over the ingredients into the baking dish.
Place a tented piece of aluminum foil gently over the casserole dish, be careful not to seal it completely.
Bake for 20 minutes, remove the foil and bake for another 20 minutes.
Layer the mozzarella cheese on top of the mixture and bake another 10 minutes before serving.
