First, I stuffed them with lots of garlic and rosemary then marinated in Italian dressing overnight in sealed heavy duty Ziploc bags.
After removing from the marinade I rubbed them with lots of good spices, (use what you and your family likes I used sea salt, cracked pepper, dried rosemary, garlic and onion powder, poultry seasoning and) then placed in the oven on 400 for a half hour then turned the oven down to 350 for another hour (I covered the wing tips with foil during this time so they would not burn) I then removed the veggies from the cavities and stuffed some of the already baked dressing into the hens, removed the foil from the tips and placed back into the oven for 20 minutes. These Cornish hens were absolutely delicious!
