Ingredients
For the Chicken Marinade:
- 1 cup mayonnaise
- 1/4 cup lemon juice
- 1 tsp garlic powder
- 1 tsp chili flakes (adjust to taste)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
- 1 kg chicken pieces (wings, thighs, or breasts)
For the Chunky Chips:
- 4 large potatoes (peeled and cut into wedges)
- Salt (for boiling water)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp olive oil
Instructions
Step 1: Marinate the Chicken
- In a large bowl, combine mayonnaise, lemon juice, garlic powder, chili flakes, salt, black pepper, and dried parsley.
- Add the chicken pieces to the marinade. Mix well to coat all the pieces evenly.
- Let the chicken marinate for at least 15–30 minutes (or overnight for maximum flavor).
Step 2: Cook the Chicken in the Air Fryer
- Preheat your air fryer to 180°C (350°F).
- Place the marinated chicken pieces in the air fryer basket in a single layer.
- Cook for 9 minutes on one side, then flip and cook for another 9 minutes.
- Check for doneness (internal temperature should reach 75°C/165°F). Set aside.
Step 3: Prepare the Chunky Chips
- Peel and slice the potatoes into thick wedges.
- Place them in a pot of water with a pinch of salt. Boil for 5 minutes, then drain.
- Toss the wedges with garlic powder, paprika, and a drizzle of olive oil.
- Place the wedges in the air fryer basket in a single layer.
- Cook at 200°C (400°F) for 10 minutes, flip the wedges, and cook for another 5–8 minutes until golden and crispy.
Step 4: Serve and Enjoy
Plate the juicy air fryer chicken with the crispy chunky chips. Pair with a side of fresh coleslaw or a light salad for a complete meal.
