Sausage Egg Casserole Topped with Cinnamon Rolls

Ingredients

  • 4 cups frozen diced hash brown potatoes
  • 6 eggs, large
  • 1/2 cup 2% milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 6 frozen sausage rounds
  • 1 pkg Pillsbury cinnamon rolls, 12.4 ounce pkg with 8 rolls

Instructions

  1. Preheat oven to 375F.
  2. Pour the frozen hash browns into a greased 9 x 13 inch baking dish and spread them out evenly.
  3. In a small mixing bowl whisk together the eggs, milk, salt and pepper.
  4. Pour the egg mixture over the hash browns.
  5. Place the sausage rounds over the eggs and hash browns, spacing them out evenly.
  6. Put the casserole in the oven and bake for 30 minutes.
  7. Remove the dish from the oven and place the 8 cinnamon rolls on top spaced out evenly.
  8. Return the casserole to the oven and continue cooking for 18-20 minutes until the cinnamon rolls are nicely browned.
  9. Remove the casserole from the oven and spread the Pillsbury icing over the cinnamon rolls.
  10. Slice and serve.
