New York cheesecake with chocolate
Ingredients
200 g dark chocolate digestive biscuits
20 g caster sugar
70 g unsalted butter, melted
For the cheesecake filling
480 g full-fat cream cheese (we used Philadelphia)
160 g caster sugar
160 ml soured cream
3 medium free-range eggs
1 tsp vanilla extract
40 g plain flour, sifted
For the chocolate topping
150 g dark chocolate, roughly chopped
300 ml soured cream
50 g white chocolate shavings (use a vegetable peeler to make them)

20 cm loose-bottomed, deep cake tin, base lined with non-stick baking paper and lightly greased
