Lemon and honey make such a great pair in terms of flavour and chicken is the perfect meat to go with this blend. If you have the chance to marinate them overnight, by all means do so. The flavour will be deeper. Remember with any marinade, the longer it sits, the better! This will allow the flavours to develop. But if you can’t wait overnight, a minimum of 2 hours is required.

Ingredients
20 pieces of chicken wings (10 wings cut at the joint and tips removed)
3 garlic cloves
Juice of one lemon
1/4 cup of honey
1 tsp of Dijon mustard
1/2 tsp of lemon pepper
A pinch of cayenne pepper
2 tbsp of olive oil
Directions
Place chicken wings in a ziplock bag.
In a bowl mix all the other ingredients.
Pour the marinade over the chicken wings then seal the bag, removing as much air as possible.
Marinate for 2 hours in the fridge (if you can marinate overnight, even better)
Place the chicken wings on a cookie sheet lined with parchment paper.
Cook the chicken wings in a preheated oven at 400F for 20 minutes.
Reserve the marinade and pour into a small sauce pan.
Bring the marinade to a boil then reduce the heat and gently boil for about 10 minutes until it thickens.
Remove the chicken wings from the oven after 20 minutes.
Brush the glaze onto the chicken wings and return them to the oven for another 20 minutes.
