Ingredients:
4 lbs chicken thighs
1 onion, quartered

1 tsp oregano

1/2 cup apple cider vinegar
2 cups chicken broth
1 cinnamon stick
2 bay leaves
1 cup diced onions
1 cup chopped cilantro
1 cup diced tomatoes
Shredded cheese, for serving
Corn or flour tortillas, for serving
Instructions:
In a large pot or Dutch oven, combine the chicken, onion, garlic, jalapeno, cumin, chili powder, paprika, oregano, salt, vinegar, chicken broth, cinnamon stick, and bay leaves.
