12 rashers streaky bacon
3 thick slices of bread (white or brown)
75g (3oz) butter
Grill the bacon until crisp and keep warm. Lightly whisk three eggs, season and put in a shallow dish.
Dip bread slices in the egg and press gently to help it absorb. Heat the butter in a pan and fry the bread for 2 mins on each side until golden brown.
Cut each slice of bread into two triangles and top each with two slices of bacon and a good drizzle of maple syrup.

For a veggie alternative, top the toast with lightly-grilled slices of pineapple or fresh blueberries instead.
