Ingredients

For the Chicken

Chicken: Breast or thighs, cleaned and diced
Batter:
Flour
Milk
Seasonings of choice: Cajun, coarse black pepper, onion powder, garlic powder, McCormick rotisserie chicken seasoning, seasoned pepper
Vegetables:
Red bell pepper (sliced)
Green bell pepper (sliced)
Onion (sliced)
For the Sauce
2 tbsp Teriyaki sauce
1 tbsp Hoisin sauce
1 tbsp Soy sauce
1 tbsp Honey
1 tbsp Brown sugar
For the Lo Mein
Noodles: Blue Dragon egg noodles
Vegetables:
Shredded cabbage
Shredded carrots
Onion (sliced)
Green onion (chopped)
Sauce:
Teriyaki, hoisin, soy sauce, honey, and brown sugar
Seasonings: Onion powder, garlic powder, McCormick rotisserie chicken seasoning, seasoned pepper

Instructions

For the Chicken
Prepare the Chicken: Clean, trim, and dice chicken into bite-sized pieces. Season generously.
Marinate: Add milk to the seasoned chicken and let it soak for at least 15 minutes.
Coat: In a bowl or bag, mix flour with your choice of seasonings. Remove chicken from the milk and coat thoroughly in the seasoned flour.
Fry: Heat oil in a deep fryer or skillet. Fry chicken until golden and crispy. Drain excess oil.
Sauté: In a skillet, heat a small amount of oil. Add peppers and onions and sear slightly. Toss in the fried chicken and mix well.
Add Sauce: Pour the sauce mixture over the chicken and veggies. Reduce heat to low and simmer for 5 minutes.
For the Sauce
Combine teriyaki sauce, hoisin sauce, soy sauce, honey, and brown sugar in a bowl. Mix thoroughly and set aside.
For the Lo Mein
Cook Noodles: Bring water to a boil and cook egg noodles for 3-4 minutes. Drain well.
Sauté Veggies: Heat oil in a skillet. Add shredded cabbage, carrots, onions, and green onions. Stir-fry until tender-crisp.
Combine: Add the cooked noodles to the skillet. Season with onion powder, garlic powder, and other seasonings.
Sauce it Up: Pour in some of the prepared sauce mixture. Mix everything using tongs. Reduce heat and allow flavors to meld.
