Salmon croquettes red potatoes eggs and grits

Salmon croquettes :

First I sautéed green onions, bell peppers and red onions.
In a mixing bowl I added the sautéed green onions/bell peppers, can salmon, mayo, egg, Italian breadcrumbs, a little corn meal, creole seasoning, pepper, salt and garlic powder.
Mixed everything together and then fried them with oil over medium heat.
The mayo is the secret. It gives it a moist taste similar to crab cakes.
