Peach Cobbler Cheesecake

Ingredients 

Cheesecake

4-8oz packages of Cream cheese (room temperature)
1 1/4 cup of sugar
4 large eggs (room
temperature)
3/4 cup of heavy whipping cream
1 TBSP of pure vanilla

Graham crust
1 box of graham cracker crumbs-use half the box or
1 1/2 cups of crushed graham crackers
1/3 stick of melted butter

Cobbler mix
1-29oz can of sliced peaches
1/2 cup of brown sugar
1/2 TSP of cinnamon
Nutmeg-by taste
1 TBSP of butter

Directions

Pre heat oven to 350

Add cream cheese and sugar mix until well blended, add eggs one at a time mixing in between, then add heavy whipping cream and vanilla… mix until well incorporated, make sure to scrap the sides of your mixing bowl

Butter/or spray a 9” spring form pan, wrap the bottom of the pan with foil to avoid water getting into the pan, in a small bowl add melted butter and graham cracker crumbs mix well. Pour graham cracker mixture in to spring form pan and smash down with a flat object( I use a 1/4 measuring cup) press against edges of pan as well. add mix to pan, place pan in a shallow baking sheet, add water to baking sheet. Bake for 45 minutes, turn off and let the cheesecake sit in oven for an additional 15 minutes with the door closed.
Refrigerate for 6 hours

In a sauce pan bring all ingredients for cobbler mix to a boil, reduce heat to med-low let simmer for 15 minutes stir occasionally. Let cool

Remove cheesecake from pan, arrange peaches on top and viola!
