Homemade Cordial Cherries

My love of these cherries all began in my early childhood. Every Christmas, my mother would buy my Nana a large box of them.

By now you probably know that we are huge fruit fanatics. Fruit on its own often busts a sweet tooth craving. Plus, they are pretty simple to jazz up and serve as decadent desserts, but for not a lot of calories. These are perfect at parties!

Recently, we realized how easy it would be to make our own cordial cherries! We can’t believe how easy these are to make and have no idea why we’ve never thought of this sooner! What a great healthy indulgence this would have been to have on hand!

Ingredients

1 pound cherries (choose ones with the stems attached)
1 cup dark chocolate, coarsely chopped

Directions

Wash cherries and dry them very well. Place on the fridge to cool for about 15-20 minutes.
Line a baking sheet with parchment paper and place it next to the stove.
After about the cherries have been cooling for about 10 minutes, begin to melt the chocolate in a double boiler. Be sure to stir the chocolate often.
Once the chocolate is melted, dip the cherries until they are coated. Place them on the baking sheet. As soon as all of the cherries are dipped, immediately place the baking sheet in the fridge. Let the chocolate set, about 15-20 minutes.

*NOTE: Remember, cherries have pits! It’s easy enough to pop them in your mouth and then spit them out in order to be able to leave the stem on, but if you prefer you can always pit them before dipping them in chocolate.
