SAUSAGE, EGG AND CHEESE BREAKFAST FLAUTAS

If your kids are tired of cereal for breakfast, and you’re looking for a way to switch things up, have I got something for you!

These Sausage, Egg and Cheese Breakfast Flautas are simple to make. Think about making them on Sunday, and wrapping them up and freezing them, so you can pull them out during the week when you need them.

Yield: 10 flautas

You’ll Need :

1 pound Pork Sausage
12 eggs
1/4 cup milk
salt and pepper to taste
10 tbsp shredded cheddar cheese
10 soft flour tortillas (soft taco size

Directions :

Brown the pork sausage in a large skillet over medium-high heat. Once it’s browned, remove the sausage with a slotted spoon to a plate covered with paper towels to drain. Discard any remaining fat out of the pan, and wipe clean with a paper towel. Return pan to the stove top to cook eggs.
In a large bowl combine 12 eggs, 1/4 cup milk, and salt and pepper to taste. Whisk till the egg mixture is an even light yellow color. Pour into the HOT skillet.
Allow the eggs to cook for a minute before gently pulling the eggs from the outer edges towards the center with a flat spatula. Allow to cook for another minute, then pull in again. Repeat this process until the eggs are fully cooked. Should be light and fluffy.
Return the sausage to the pan and mix to combine.
Heat oven to 375 degrees F.
Place a cup of the sausage and egg mixture in the center of a flour tortilla, add a tablespoon of cheese and then roll up. Place seam side down on a baking sheet. Repeat for the remaining tortillas.
Bake for 15 minutes, then flip and bake for an additional 10 minutes.
Let cool slightly and enjoy.
